  • 1 kg belly of pork
  • 30 g honey
  • 40 ml soy sauce
  • 40 ml port wine or red wine
  • 2 whole cinnamon sticks
  • 2 bay leafs
  • 1 clove of garlic crushed
  • 375 g strong bread flour
  • 20 g fresh yeast or 7g dried yeast (do not use fast action yeast)
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 40 g vegetable suet
  • 1 tbs full fat milk powder
  • 10 g caster sugar
  • 1 tsp table salt
  • 200 ml water
  • 1 english cucumber
  • 12 breakfast radishes
  • 8 tsp caster sugar
  • 2 tsp table salt
  • 1 tbs olive oil
  • Steamed Buns
  • Belly of pork slices
  • radish and cucumber pickles
  • 125 ml hoisin sauce
  • 3 spring onions, washed and sliced finely on a angle
