1/2 cup freshly grated Parmesan cheese

1/4 cup crumbled blue cheese , such as Gorgonzola, at room temperature

3 tablespoons finely chopped fresh parsley

Salt and freshly ground black pepper

2 packages (12-ounces 50 skins each) wonton skins

1 large egg , beaten

1 quart chicken broth or canned low-sodium broth

Freshly grated Parmesan cheese , for serving
