Ingredients

1/2 pound grass fed ground beef

1 oz dried porcini mushrooms, reconstituted, squeezed dry and chopped fine

2-3 T minced shallot

1 T minced parsley

1 t salt

1/2 t black pepper

Sliced or grated vegan cheddar (optional)

1/2 c low-fat mayonnaise (Low-fat has 15 calories a tablespoon, reduced-fat has 60 and real mayo has about 100.)

3/4 c roasted red bell pepper

1/4 c green onions, roughly chopped

2 T Dijon, Cajun or brown mustard

2 T lemon juice plus zest of small lemon

2 plump garlic cloves

1-2 T capers, drained and rinsed

1 T fresh parsley

1/2-1 t crushed red pepper flakes
