Ingredients for 4 servings

2/3 cups dried brown lentils (or 1 (14 oz) can lentils, rinsed and drained)

1 tablespoon canola oil

1 medium onion, diced

1 clove garlic, minced

1 teaspoon sugar

1 teaspoon salt

1 teaspoon cumin

1/2 teaspoon black pepper

1/2 teaspoon chili powder

1/4 teaspoon oregano

1/4 teaspoon cayenne pepper (optional; more or less to taste)

1 bay leaf

Optional garnishes: Minced onion, tomato, and parsley
