3 cups boiling water

6 oz. fettuccine-width rice noodles

1/4 cup canola oil or peanut oil, divided

2-4 T tamarind paste

1/4 cup fish sauce

1/3 cup honey

2 T rice vinegar

1/2 t red pepper flakes, or to taste

1/4 cup chopped scallions

1 garlic clove, minced

2 eggs, lightly beaten

1 small head napa cabbage, shredded (about 4 cups)

1 cooked chicken breast, cut into bite sized pieces

1/2 cup – 1 cup chopped peanuts

1 lemon or lime, quartered
