Ingredients for 10 servings

1 bundle fresh thyme

Kosher salt

1 tablespoon crushed red pepper flakes

10 bay leaves

Kosher salt and freshly ground black pepper

1 bunch fresh rosemary, leaves finely chopped

10 garlic cloves, smashed

2 large carrots, peeled and cut into 1/2-inch dice

1 bunch fresh sage, leaves finely chopped

2 pints Brussels sprouts, halved

1 bottle dry white wine

2 large Spanish onions, diced

20 garlic cloves, thinly sliced

1 pound fingerling potatoes, cut lengthwise

1 celery root, cut in 1/2-inch dice

1 picnic shoulder of pork with the skin, bone removed

2 ribs celery, cut into 1/2-inch dice
