Ingredients

The sauce:

6 tablespoons ketchup (see Note)

2 teaspoons Worcestershire sauce

2 teaspoons lemon juice

1 teaspoon soy sauce

1 teaspoon rice vinegar

1/2 teaspoon grated garlic

-- Scant 1/4 teaspoon grated fresh ginger

The cutlets:

1 pound pork loin

-- Peanut or vegetable oil

-- Kosher salt to taste

-- Freshly ground black pepper to taste

1/2 cup all-purpose flour for dusting

2 eggs beaten with 1 teaspoon water

1 1/2 cups panko (Japanese breadcrumbs)

1/2 lemon, cut into half-moons or wedges
