Ingredients for 4 servings

8 x sundried tomatoes (the dry kind, not packed in oil)

3 tbsp olive oil

1/2 x a yellow onion, finely chopped

2 x garlic cloves, minced

1/2 tsp chili flakes

1 tbsp concentrated tomato paste

1 small green cabbage, cored and shredded

400 g can chopped tomatoes

2 cup previously cooked cannellini beans (or 2 x 400g cans, rinsed and drained)

sea salt and black pepper

parmesan cheese, to serve
