4 tablespoons peanut oil, or as needed

1 tablespoon cornstarch

1 cup chicken stock

Big pinch white pepper

1 1/2 tablespoons soy sauce

1/2 tablespoon oyster sauce

1 teaspoon minced fresh ginger

1 teaspoon minced garlic

4 green onions, cut into 2-inch lengths

1/2 teaspoon salt

1 whole chicken breast, boned, skinned, cut into 1/2-inch cubes

1/4 pound fresh shiitake mushrooms, sliced (or 6 dried Chinese black

mushrooms, soaked in warm water, stemmed, sliced)

3/4 pound baby bok choy, trimmed, cut into 2-

inch lengths

1 teaspoon sesame oil
