Ingredients for 4 servings

½ tsp ground ginger

2 red peppers , deseeded and cut into chunks

1 large butternut squash , about 1.25kg/2 lb 12oz, peeled, deseeded and cut into bite size chunks

450.0ml strong-flavoured vegetable stock

3.0 tbsp chopped coriander

12 small pitted prunes

2.0 tsp clear honey

250.0g couscous

400.0g can chickpeas , rinsed and drained

FOR THE COUSCOUS

400.0g pack shallots , peeled and cut in half

handful toasted flaked almonds

2.0 tbsp chopped mint , plus extra for spinkling

2.0 tbsp olive oil

1.0 tbsp harissa (Moroccan chilli paste)

1.0 tsp ground cinnamon
