I used breakfast sausage patties instead of chorizo for this, which I browned most of the way and broke up in a pan before adding potato, onion, and a few minced garlic cloves. I also used about 5-6 small Yukon gold potatoes. Used 9 eggs instead of 6 to balance out the amount of potato. Would make again, but would use spicy Italian sausage instead, and maybe add some bell pepper and spinach. Seems like you can pretty much add any veggies to this that you might have on hand in the fridge.

Ingredients for 4 servings

1 medium onion, quartered and very thinly sliced

2 big potatoes (about 1 pound), quartered and very thinly sliced

2 to 4 ounces dried Spanish chorizo, diced

1/4 cup olive oil, plus 2 tablespoons, divided

3/4 teaspoon salt, divided

6 eggs, beaten

Freshly ground black pepper
