  • 1/3 cup tomato paste
  • 4 cloves garlic, chopped
  • 2 Tbsps curry powder
  • 1 tablesppon grated fresh ginger
  • 1 tsp ground cumin
  • 1 medium onion, chopped
  • 2 lbs boneless, skinless chicken thighs (about 10)
  • kosher salt and black pepper
  • 1 1/2 cups long-grain white rice
  • 1/2 cup plain whole-milk Greek yogurt
  • 2 scallions, thinly sliced

This was amazing. It's all about a high-grade curry powder. I used 2% Greek yogurt, some homemade pepper sauce, and a pinch of brown sugar to bring out the flavor! Next time I might try it with coconut milk instead of yogurt just for kicks!

Made this over the weekend. Not technically seasonal in terms of ingredients, but it is winter and that's when we use a slow cooker. It was super easy and really tasty. My first crock pot meal ever. The only thing I would add is potatoes. Heft it up a bit. Plus I use sushi rice because sticky is good!
