1 tablespoon fresh orange juice

1 tablespoon fresh lemon juice

3 tablespoons rice wine vinegar

2 whole vanilla beans (be sure to use soft fresh beans)

1 1/2 teaspoon freshly ground black pepper

1 tablespoon orange zest

1 cup olive oil

1 teaspoon sugar

3 cups of thinly sliced oranges, blood oranges and navel oranges

1 pound of rock shrimp

1/2 pound large shrimp

1 head of Bibb (butter) lettuce

1 cup Castelvetrano olives or other mild green olive
