1/2 cup mayonnaise

1/4 cup cider vinegar

2 teaspoons sugar

-- Kosher salt and ground black pepper, to taste

The slaw:

2 cups thinly sliced fennel (from about 2 small heads), fronds saved for garnish

1/2 red onion, thinly sliced

1 large apple, julienned

2 cups shredded cooked turkey, mix of white and dark meat

1/4 cup coarsely chopped fresh parsley

-- Lemon juice, to taste (optional)
