  • 1 (1-lb) piece of tuna loin fillet
  • Oil, for brushing
  • Finely ground sea salt
  • Freshly ground black pepper
  • 4 sprigs cilantro, for garnish
  • Flesh of 1 large avocado
  • 1 jalapeño chili pepper, seeded
  • 1 lime (juice only)
  • 2 scallions, both white and tender green parts, chopped
  • 1 Tbsp chopped cilantro
  • 3 Tbsps canola oil
  • 1/2 tsp salt
  • 1/4 cup water
  • 1 Tbsp dark soy sauce
  • 1 scallion, both white and tender green parts, chopped
  • 1/4 jalapeno chili pepper, seeded and finely chopped
  • 1/2 lime (zest and juice)
  • 1/2 stalk lemon grass, outer leaves removed and core finely sliced
  • 1 tsp minced ginger root
