Oil, for brushing

Finely ground sea salt

Freshly ground black pepper

4 sprigs cilantro, for garnish

1 jalapeño chili pepper, seeded

1 lime (juice only)

2 scallions, both white and tender green parts, chopped

1 tablespoon chopped cilantro

3 tablespoons canola oil

1/2 teaspoon salt

1/4 cup water

1 tablespoon dark soy sauce

1/4 jalapeno chili pepper, seeded and finely chopped

1/2 lime (zest and juice)

1/2 stalk lemon grass, outer leaves removed and core finely sliced

1 teaspoon minced ginger root
