4 ounces Dungeness or lump crab meat

2 ounces cream cheese

1/4 teaspoon grated lemon zest

1/2 teaspoon lemon juice

1/4 teaspoon Kosher salt or to taste

1/8 teaspoon freshly ground black pepper

2 teaspoons snipped chives

18 wonton wrappers

vegetable oil for deep frying

Egg Wash

1 large egg whisked with 2 tablespoons water
