1/3 to 1/2 cup ice water

2 lb. Braeburn apples, peeled, cored and cut into slices 1/4 inch thick

1 1/2 lb. Granny Smith apples, peeled, cored and cut into slices 1/4 inch thick

3/4 cup sugar

1 Tbs. fresh lemon juice

3/4 tsp. ground cinnamon

1/4 tsp. freshly grated nutmeg
