Ingredients for 4 servings

2 Tbsp. olive oil

4 boneless short ribs of beef (about 2 lbs.)

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

4 garlic cloves, peeled

2 Tbsp. rosemary, fresh

1 can Italian plum tomatoes, drained

1/2 bottle (375 ml.) Zinfandel

1/4 cup fresh flat-leaf parsley or thyme, chopped (for garnish)
