The Dough

2 teaspoons dry yeast (this is less than 1 package)

1 teaspoon sugar

1/2 cup lukewarm water (it should be about 90 degreesF)

1 cup cool water

2 tablespoons olive oil

2 1/2 teaspoons sea salt

3 1/2 cups bread flour

1/2 cup all-purpose flour, for kneading

Several tablespoons semolina, for dusting the pizza stone or pans

The Pizza

1 tablespoon good quality olive oil plus a little more for brushing on dough

1 cup good quality canned crushed tomatoes

2 garlic cloves, minced

2 tablespoons slivered sweet fresh basil

1 teaspoon dried oregano

1/2 teaspoon sea salt

Toppings of choice, such as grated pecorino, slices of fresh mozzarella, sliced fresh tomatoes, grilled vegetables, artichoke hearts, sauteed sausage
