Awesome! Made this for guests tonight and it turned out perfectly. Made little carnitas tacos with mango salsa... Yummy! I let it sit salted in fridge over night. Follow cooking instructions to a T. The meat was so flavorful and tender...this one is a keeper.

4 pounds boneless pork shoulder, cut into 5-inch chunks, trimmed of excess fat

1 tablespoon coarse sea salt

2 tablespoons canola or neutral vegetable oil

water

1 cinnamon stick

2 teaspoons ancho chile powder

2 bay leaves

1 teaspoon ground cumin

6 cloves of garlic, peeled
