I made this soup and it was wonderful. It was delicate and I love the blend of the fresh lemon, broth and fresh mint. Very satisfying, went for seconds! I would definitely make it again and again.

Ingredients for 4 servings

6 cups Golden Chicken Broth

1/4 cup fresh lemon juice

1 boneless, skinless whole chicken breast, cut into 1x1/2-inch strips or 1/2-inch dice

1/2 tsp. kosher salt

Salt and freshly ground black pepper

6 Tbs. chopped fresh mint leaves

1/2 cup long-grain rice, preferably basmati

1/2 cup water
