I used this recipe for banana cream pie cupcakes. It thinned out a few hours after I put the banana in which I didn't expect. So next time I'll let the pudding thicken more. Although it was pretty darn thick before the bananas. I'll definitely make this again. It was SO easy!!

2 2/3 cups whole milk, divided

1/2 cup sugar

1/4 cup cornstarch

1/4 teaspoon salt

Seeds from 1/2 vanilla bean (or 2 teaspoons of vanilla extract)

1 large egg
