10 allspice berries , cracked or 2 teaspoons allspice , ground

1 teaspoon cumin seed , toasted

2 tablespoons dried Mexican oregano , toasted

3 tablespoons kosher salt

6 bay leaves

1/4 cup apple cider vinegar

12 garlic cloves

3 ounces achiote paste

2 habaneros , fresh, stems and seeds removed

1 lb banana leaves

1 medium onion , coarsely chopped

2 tablespoons vegetable oil

2 tablespoons worcestershire sauce
