1 large loaf semolina bread, sliced 1/2-inch thick

4 large cloves garlic, peeled and sliced

1/2 cup plus three tablespoons extra virgin olive oil (EVOO)

1 large onion, peeled, halved and thinly sliced

1 red bell pepper, seeded and thinly sliced

2 large heads broccoli, trimmed and cut into small florets

1 cup chicken stock

Salt and pepper

3 tablespoons butter

3 tablespoons flour

3 cups milk

1/2 teaspoon ground nutmeg

2 cups fresh ricotta cheese

1 cup grated Parmigiano Reggiano cheese
