1 tomato, chopped

1/2 onion, chopped

8 pitted kalamata olives, halved

1 tbsp extra-virgin olive oil

1 tsp wine vinegar or balsamic vinegar

1 small bunch fresh basil, chopped

2 garlic cloves, minced

1 can (15 or 16 oz) white beans, rinsed and drained

1/4 cup chopped fresh mixed herbs

1 tsp red wine vinegar or balsamic vinegar

Salt and freshly ground black pepper (optional)
