Ingredients for 4 servings

1 x 250g pack Cypriot halloumi by Sainsbury's, cut into chunks

1 x 400g pack mixed peppers, deseeded and cut into chunks

1 red onion, cut into wedges

1 courgette, cut into chunks

165 ml olive oil by Sainsbury's

½ x 28g pack fresh flat-leaf parsley by Sainsbury's, washed

½ x 20g pack fresh tarragon, washed and leaves picked

½ x 28g pack fresh basil, washed and leaves picked

2 tablespoons capers, drained and rinsed

2 cloves garlic, roughly chopped

Juice of 1 lemon

1 x 80g bag rocket salad by Sainsbury's
