Skinny-fied this tonight...Instead of apple juice, just grated half an apple and thinly sliced 2 others. And because there are 600! calories in 3/4 cups of walnuts, just used 2 chopped Tablespoons..adding a bit on top of each serving. If you have a mandoline, use it for the fennel...the taste will spread but not overwhelm..And I used 2 teaspoons of walnut oil instead of 2 1/2 Tablespoons...if you pour it in your hand and lightly massage the greens, each piece will be coated but you'll add only 80 calories instead of 300! Lovely and Delicious!

Ingredients

1/4 cup chopped shallots

1/4 cup unfiltered apple juice

2 tablespoons apple cider vinegar

2 1/2 tablespoons roasted walnut oil*

1/2 teaspoon kosher salt

5 ounces baby arugula (about 6 cups)

2 Fuji apples, quartered, cored, and sliced thinly

1 fennel bulb, halved and sliced thinly

3/4 cup toasted walnut pieces
