2 tsp. extra-virgin olive oil

1 shallot, diced

2 cloves garlic, peeled and minced

1 Tbsp. dried thyme

1/4 tsp. chili powder

2 cups cooked quinoa (about 1 cup uncooked quinoa)

1 cup Greek plain yogurt

2 large eggs, lightly beaten

¾ tsp. sea salt

½ tsp. freshly ground white pepper
