Amazing!!!!!! I made it as a side for chicken and was excellent! I have never had red cabbage in a warm or hot meal and loved it! We don't eat bacon so I just ignored it and was still great. /definitely recommended...

Ingredients

olive oil

150 ml balsamic vinegar

1 tablespoon fennel seeds bashed

a handful of chopped fresh flat leaf parsley leaves

sea salt and freshly ground black pepper

2 good eating apples peeled and chopped into 2 5cm 1 inch pieces

1 red cabbage outer leaves and core removed chopped into irregular chunks

250 g smoked streaky bacon finely sliced

1 onion peeled and sliced

a knob of butter
