Ingredients for 8 servings

1/2 lime, juice of

2 lbs cut up boneless skinless chicken thighs

4 garlic cloves , chopped

1 medium onion , sliced in thin strips

1 tablespoon apple cider vinegar

1/2 cup tomato based chili sauce

2 tablespoons fresh ginger (chopped or grated)

1/4 teaspoon cayenne pepper

salt and pepper

2 (16 ounce) packages rice noodles (wide flat clear looking)

2 cups bean sprouts

For the Pad Thai

1 lime , grated, zest of

2 fish bouillon cubes , dissolved in 2 tbsp boiling water or 2 tablespoon asian fish sauce

3 tablespoons packed brown sugar

2 eggs , scrambled ahead of time

1/2 cup crushed peanuts

For Thai Sauce

2 tablespoons soy sauce

1 dash worcestershire sauce

4 green onions , sliced diagonally

pepper (no salt)

2 tablespoons peanut butter

1 tablespoon chili-garlic sauce
