1 tablespoon plus 1/2 cup extra-virgin olive oil

About 1 1/4 tsp. kosher salt, divided

1 cup walnut pieces

1 tablespoon cumin seeds

Zest of 2 lemons

3 tablespoons lemon juice

2 tablespoons chopped shallot

1/2 teaspoon pepper

3 cups shredded cooked chicken

1 1/2 qts. loosely packed tender dandelion green tops or arugula
