1/4 cup red wine

1 tablespoon minced shallots

1 tablespoon soy sauce

6 (8-inch) bamboo skewers, soaked in warm water for 30 minutes

1/2 cup olive oil

4 ounces shaved Parmigiano-Reggiano

1 tablespoon Essence, plus more for sprinkling, recipe follows

1/4 cup red wine vinegar

2 teaspoons Dijon mustard

2 pounds beef tenderloin fillet tips, cut into 1 1/2-inch cubes

1 tablespoon minced garlic

4 large heads romaine lettuce, torn into pieces

12 (1/4-inch-thick) slices French or Italian bread

1 teaspoon freshly ground black pepper

1/4 cup olive oil

2 tablespoons Worcestershire sauce
