And it turns out my kids don't like swiss meringue buttercream icings which is probably for the best since it took me forever to make the one batch although they absolutely loved the colorful cake layers

Ingredients

Vegetable shortening

3 cups all-purpose flour

4 teaspoons baking powder

1/2 teaspoon salt

2 sticks (1 cup) unsalted butter, room temperature

2 1/3 cups sugar

5 large egg whites, room temperature

2 teaspoons pure vanilla extract

1 1/2 cups milk, room temperature

Red, orange, yellow, green, blue, and purple gel food coloring
