3 cups half-and-half

4 large eggs

1 1/2 teaspoons salt

1 teaspoon freshly ground pepper

2 tablespoons butter or margarine

1/2 cup minced green onions

4 garlic cloves, minced

1 (10-ounce) package fresh spinach, coarsely chopped

1/2 cup chopped fresh parsley

Garnishes: baby carrot fans, fresh parsley sprigs
