Made this for Christmas dinner. The roasting gives the potatoes a nice rich flavour, but I cheated and didn't put them back in the skins. I had too many tear due to haste and just put them back in the oven in a casserole dish. Turned out great! Will definitely make these again. Leftovers are excellent spread over a pizza crust and topped with cheese and kale chips.

9 sweet potatoes, about 12 ounces each

1 tablespoon canola or vegetable oil

1 stick (8 tablespoons) unsalted butter, cut into tablespoons

1/3 cup pure maple syrup, preferably grade B

3/4 teaspoon ground cinnamon


Cayenne pepper

3 cups mini marshmallows
