  • 1/2 Recipe Chipotle Mole
  • 1 Package (1 lb 2 oz) “Chicken Style” Seitan, Drained
  • 1 Cup Brown Rice
  • 1 Cup Frozen Corn
  • Parsley or Cilantro
  • 8 Ancho or Chipotle Chilles, stemmed and seeded
  • 1 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • Large Pinch Cumin
  • Scant 1/4 tsp Ground Cloves
  • 2/3 Cup Vegetable Broth
  • 3 Tbs vegetable oil Earth Balance
  • 2 oz. Whole Almonds
  • 1 Tbs Sesame Seeds, toasted (optional)
  • 1 Small Onion, sliced 1/8 inch thick
  • 1/4 Cup Raisins
  • 5 oz. Ripe Tomatoes
  • Scant 1/2 tsp Cinnamon
  • 1/4 Cup Unsweetened Chocolate*
  • 2 Slices Bread, toasted
  • 1 Cup Broth
  • 4 Cups Vegetable Broth
  • About 2 1/2 tsp salt, or to taste
  • 1 Tbs sugar to taste
  • 3 Tbs Earth Balance
