1/2 cup finely chopped red onion

1 cup applesauce (homemade preferred), or 3/4 cup applesauce + 1/4 cup apple butter

1 cup canned black beans, rinsed and well drained

1/2 cup cooked steel-cut oats (Bob's Red Mill preferred)

1/2 cup cooked buckwheat groats

1/4 teaspoon finely grated ginger

1/4 cup finely chopped toasted, skinned hazelnuts

Kosher salt, to taste

Black pepper, to taste

3 to 4 ounces baby arugula

Extra virgin olive oil

2 to 3 tablespoons finely diced apple (dice just before serving)
