1 large onion, chopped

One 2-inch piece fresh ginger, peeled and grated

4 garlic cloves, minced

1 tbsp. ground cumin

2 tsp. whole mustard seeds

2 tsp. ground coriander

1 tsp. ground tumeric

1 tsp. paprika

1/4 tsp. cayenne pepper, or more to taste

1 red bell pepper, chopped

1 large sweet potato, peeled and chopped

1 pound Yukon Gold potatoes, cut into bite size pieces

2 large tomatoes, seeded and chopped

1/2 14-ounce can lite coconut milk, or more to taste

2 tbsp. smooth peanut butter

1 large bunch collard greens, stemmed and coarsely chopped

1 14-ounce can chickpeas, rinsed and drained

1/2 cup cilantro leaves, chopped
