1 onion, chopped

1 carrot, chopped

1 celery stalk, chopped

3 cloves garlic, peeled and left whole

1 1/2 cups Puy lentils (those little black ones)

2 cups red wine

Salt

1 bay leaf

2 1/2 ounces fresh spinach
