2 cups Chicken Stock

2 cups Finely diced, peeled potato (1 large, or 2 medium Yukon gold or standard baking potatoes should do)

2 cups whole milk

1/2 cup gorgonzola (crumbled,loose)

3 tablespoons butter, divided

2 large Spanish onions, halved and thinly sliced

2 Anjou or Bosch pears, peeled and diced, 1/2 in cubes

1/4 cup white wine

2 tablespoons fresh chopped sage

1 teaspoon nutmeg

Salt and pepper
