1/2 small jalapeno chile pepper, seeded and minced (wear plastic gloves when handling)

1 pound extra-lean ground beef chuck

1 can (14 1/2 ounces) stewed tomatoes

3 tablespoons chili powder

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground cumin (optional)

1 can (15-19 ounces) pinto beans, rinsed and drained

1 cup yellow cornmeal

1/2 cup whole wheat pastry flour

1 1/2 teaspoons baking powder

1 large egg, at room temperature

1 cup 2% milk, at room temperature

3 tablespoons melted butter
