  • 4 boneless, skinless chicken breasts, rinsed and blotted dry (4 ozs each)
  • 1 tsp sesame oil
  • 1 Tbsp madras curry powder
  • 1/2 cup orange juice
  • 1/2 tsp red pepper flakes
  • 1 cup chopped pineapple
  • 1/2 cup orange segments, seeded and chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup finely chopped onion
  • 1/2 cup light coconut milk
  • Rice
  • 1/2 Tbsp sesame oil
  • 2 cloves garlic, finely chopped
  • 3/4 Tbsp finely chopped crystallized ginger
  • 5 scallions, finely sliced
  • 2 Tbsps chopped red bell pepper
  • 1 1/2 cups uncooked rice
  • 2 Tbsps tamari
  • 2 Tbsps brown sugar
  • 2 cups rice vinegar
  • 3 cups hot water
