1 teaspoon toasted sesame oil

1 teaspoon grated fresh ginger

1/2 cup minced scallions, all parts

1 red bell pepper, cut into 1/4" strips

1 mango, peeled and cut into 1/4" dice, divided

1/4 cup chopped cilantro
