3/4 cup plus 2 tablespoons all-purpose flour

3 1/2 ounces milk chocolate, chopped

1/2 cup sugar

1/4 cup plus 2 tablespoons unsweetened cocoa powder

Pinch of salt

2 large eggs at room temperature, lightly beaten

1 teaspoon pure vanilla extract

1 large egg white, beaten

1 pound semisweet or bittersweet chocolate, tempered (see Note)
