1/2 cup oil

1 red bell pepper , chopped

4 celery ribs , chopped

1 tablespoon creole seasoning or Old Bay Seasoning

1 (28 ounce) can crushed tomatoes

cayenne pepper

3 lbs medium shrimp , peeled and deveined seasoned with

2 lbs fresh lump crabmeat , picked over

2 bay leaves

1 lb okra , trimmed and sliced

6 cloves garlic , minced

1 teaspoon hot pepper sauce (optional)

1 lb andouille sausage , sliced about 1/4 inch thick on the bias,browned,fat removed

6 cups cooked long-grain white rice

3/4 cup flour

1 gallon shrimp stock or chicken stock or 1 bottle clam juice

fresh ground black pepper

1 large onion , chopped

1 teaspoon thyme

1 green bell pepper , chopped

salt

1 teaspoon oregano
