2 crisp firm apples , peeled, cored and thinly sliced

1/2 cup heavy cream , plus

3/4 cup grated sharp cheddar cheese

2/3 cup apple cider , plus

fresh ground black pepper

1 teaspoon fresh thyme leave

3 tablespoons apple cider

kosher salt (coarse)

2 teaspoons chopped fresh thyme leaves

2 tablespoons butter , melted

3 tablespoons heavy cream

2 sliced yukon gold potatoes

For the gratin

1 1/2 cups coarse fresh breadcrumbs

1/4 cup butter
