Beet Green And Fava Saute With Tomatoes And Halloumi

Ingredients

2 Tablespoons olive oil, divided

4 garlic scapes, thinly sliced

1 1/2 pounds fava beans in their pods (or one Catalpa Ridge share)

Greens from 1 bunch beets

3 tomatoes of various colors, cut into wedges

Juice and zest of 1 lemon

Small handful of salad burnet, chopped

As much halloumi cheese as you can afford, sliced about 1/4 inch thick

Salt and pepper to taste
