1 1/2 portobello mushrooms (from Master Recipe), cut into medium dice

4 onion quarters (from Master Recipe), cut into medium dice

6 to 8 chicken wing pieces (from Master Recipe), as much skin as possible removed, meat diced

2 or 3 lamb chops (from Master Recipe), finely diced

1/4 cup Shallot-Mustard Sauce (reserved from Weekend Recipe)

3 tablespoons white wine vinegar

1/4 teaspoon salt

Freshly ground pepper to taste

1 bunch watercress, leaves and tender stems only

1 heart of romaine, cut into bite-size pieces

1 log mild goat cheese, cut into 8 rounds

4 pita breads, each cut into 8 triangles, toasted
