Ingredients for 4 servings

1 cup basmati rice, cooked as per instructions on packaging

1 cup french green or beluga lentils

1 tbsp vegetable stock cube, powder or paste

1 clove garlic, peeled & smashed

4 green onions, sliced into 1/4 inch slices

1 cup english cucumber, seeded and diced

1 cup quartered heirloom tomatoes

1 small bulb fennel, shaved

1/2 cup red seedless grapes, halved

1/2 cup spiced pecans

1/4 cup olive oil

1/4 cup fresh dill, roughly chopped

1/4 cup flat leaf parsley, roughly chopped

1/4 cup toasted pine nuts

2 tbsp nutritional yeast

3 tbsp white balsamic vinigar

2 tbsp lemon juice + zest of one lemon

sea salt and freshly cracked black pepper to taste
