This duck recipe turned out so well - it's difficult to get a whole roasted duck just right but this one stays juicy and the skin gets crisp!

5 pound Long Island duck (aka Peking)

2 teaspoons mustard

1/4 cup honey

2 teaspoons caraway seeds

1 teaspoon kosher salt (halve if using regular salt)
